GF Chocolate Chip Banana Bread

A few months ago, I had a few bananas that were pretty ripe....okay, they were so spotted that I was ready to throw them out. I hate wasting food, and was pretty sad that we didn't eat them in time. Thats when I remembered how perfect super ripe bananas are for making banana bread. I scoured Pinterest for a delicious recipe, and was so happy to realize I had all the ingredients I needed. I pulled everything out, and started baking.

Gluten Free Chocolate Chip Banana Bread

 Prep Time 5 minutes

 Cook Time 40 minutes

 Total Time 50 minutes

Ingredients

  • 3-4 VERY ripe Bananas
  • 1/2 cup Softened Butter
  • 1/4 cup of Almond Butter (OR sugar if you want)
  • 1/4 cup Honey
  • 2 Large Eggs
  • 1 tsp. Vanilla Extract
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 2 cups Bobs Red Mill 1 to 1 Baking Flour
  • 1 cup Milk Chocolate or Semi-sweet Chocolate Chips
  • 1/2 halved Walnuts

Instructions

  1. Preheat oven to 375 degrees, and lightly spray a loaf pan.

  2. In a mixing bowl, mix together all the wet Ingredients (first 6 ingredients).

  3. In a separate bowl, mix together the dry ingredients (besides the chocolate chips/walnuts).

  4. Add the dry ingredients to the wet ingredients, and mix mix mix!

  5. Add the chocolate chips & walnuts in, and mix with a spatula. 

  6. Pour evenly into the loaf pan, and place in the oven for 40-50 minutes. 

  7. Let cool, and SERVE! :)
