Guilt Free No Bake Cookies

It's officially the holiday season which means good food, and even better sweets & desserts! Instead of overindulging in cookie dough or eating an entire bag of licorice you can make these treats instead! It especially goes down easier when the treat is not only a bit healthier than other choices, but tasty too! I found this great recipe on Pinterest for No Bake Oatmeal Cookies and tweaked it a little! It is SO yummy and definitely more guilt free then a big brownie slice! (Even though brownies are sooooo good!!!!!!)

No Bake Oatmeal Cookie Recipe:

  • 2 cups coconut sugar
  • ½ cup coconut oil
  • 1 tbsp cocoa powder
  • ½ cup almond milk
  • ½ cup peanut butter
  • ½ cup dark chocolate chips
  • 1 tsp almond flavoring
  • 3 cups quick or rolled oats (certified gluten free)
  1. Mix the coconut sugar, coconut oil, cocoa, and almond milk in a medium saucepan and bring to a boil for one minute and remove from heat
  2. Add the peanut butter, vanilla and chocolate chips and mix well. Stir in the oats, one cup at a time, stirring well after each cup
  3. Spoon heaping tablespoon sized mounds onto parchment paper and let cool completely
  4. Transfer to the fridge to set
