Ritz Cracker Sweet & Savory

Growing up I remember loving RITZ Crackers, they are buttery soft, melt in your mouth crackers...and they were my favorite to snack on! I kind of forgot about them, until I got married to Colten. He loves snack food, and we seem to always have these crackers in our house. I have been getting creative with these crackers, and came up with some delicious Sweet & Savory recipes using them. These recipes are perfect whether you're craving a simple but delicious snack, or you're hosting a party with friends!

 

These RITZ Cracker Chocolate Coconut crackers are my favorite easy snack. Actually....I can’t choose a favorite. But they are for sure ones I make the most. The chocolate that you dip the RITZ Crackers in is a perfect balance of milk chocolate with the salt from the crackers. I prefer Guittard's milk chocolate chips, because they are sooo dang good, and really add to the decadence of this super simple recipe.

I hosted a party the other day with some friends, and made my RITZ Chocolate Coconut crackers, along with RITZ Cracker Pepper Jelly Appetizer! I love making both the sweet and savory recipes using RITZ Crackers! It makes for an easy grocery haul, and I can quickly make both recipes!! RITZ Cracker Chocolate Coconut Crackers

RITZ Cracker Chocolate Coconut Crackers are the perfect combo of salty and sweet, with a crunch of coconut. These freezer crackers are great for making for a party, or to have on hand in your freezer for a quick treat!

 Prep Time 15 minutes

 Cook Time 25 minutes

 Total Time 40 minutes

Ingredients

  • 30 RITZ Crackers
  • 12 ounces milk or dark melting chocolate
  • Shredded Sweetened Coconut flakes

Instructions

  1. Prep a cookie sheet with parchment paper

  2. Melt the milk/dark chocolate together in a double boiler or on the stove top.

  3. Dip crackers halfway in melted mixture and put on a cookie sheet. Quickly sprinkle coconut flakes on the chocolate. Once the sheet is full, place it in the freezer until the crackers are frozen.

  4. Store in a zip lock bag in the freezer.

I've gotten the best results with Guittard's melting chips for these crackers.

RITZ Cracker Cream Cheese + Pepper Jelly Appetizers

RITZ Cracker cream cheese + pepper jelly appetizers are perfect for a quick snack, or a large party. The combo of easy staple ingredients comes together for an amazing appetizer that everyone will enjoy.

Ingredients

  • 30 RITZ Crackers
  • 16 oz. plain Cream Cheese
  • 1 bottle Pepper Jelly

Instructions

  1. Prep a platter or plate (depending on size of party)

  2. Take a knife and spread a small amount of cream cheese over the RITZ Crackers.

  3. Place a tsp. of pepper jelly in center of cracker, on top of cream cheese. 

  4. Salt & Pepper. Place on Platter or plate!

Recipe Notes

You can change up the flavors of cream cheese or pepper jelly. You can also put a bowl in center of platter with additional pepper jelly!

Balsamic Chicken Salad

I love salads....BUT not just any salad...I love loaded salads, with plenty of veggies or fruits, meat, and yummy dressing. This salad does not disappoint. I found it on CafeDelites Page, and made it for Colten and I. We loved it, and it is one of our favorites...so I am sharing it all with you!

INGREDIENTS

Lemon Quinoa:

  • ½ cup dry quinoa
  • 1 cup vegetable or chicken stock (or water mixed with 1 teaspoon vegetable stock powder)
  • Pinch of salt to season
  • Juice of ½ a lemon
     

Chicken:

  • 6 boneless chicken thigh or breast fillets, trimmed of fat
  • 1 tablespoon garlic (or plain) olive oil
  • 2 tablespoons balsamic vinegar
  • Juice of ½ a lemon
  • 1 teaspoon vegetable stock powder
  • 1 teaspoon garlic powder/granules or 1 clove garlic, crushed
     

Salad:

  • 6 cups (200g | 7oz) cos lettuce, washed and shredded
  • 200g | 7oz grape tomatoes, halved
  • ½ medium red onion, thinly sliced
  • 100g | 3.5oz pitted kalamata olives
  • 50g | 1.7oz reduced fat Feta cheese
  • ½ cup continental parsley
     

Dressing:

  • 2 tablespoons garlic olive oil
  • 2 teaspoons balsamic vinegar

INSTRUCTIONS

For Lemon Quinoa:

  1. In a small saucepan, combine quinoa, stock and salt together. Bring to the boil; reduce heat to gentle simmer, cover with a lid and cook for 15 minutes or until broth has absorbed and quinoa is soft. Remove from heat and set aside while still covered and allow to steam. After about 2 minutes, fluff with a fork. Allow to cool slightly and add the lemon juice.

For Chicken:

  1. Add the chicken fillets in a large skillet or nonstick pan with the olive oil, balsamic vinegar, lemon juice, stock powder and garlic powder/granules. Saute the chicken until nice, crispy and golden on both sides, and cooked through. Remove from heat; allow to cool slightly, and slice into 1-inch strips.

For Dressing:

  1. Combine all dressing ingredients in a small bowl/jug, and whisk until mixed through.

For Salad:

  1. Combine the lettuce, tomatoes, onion, olives, Feta and parsley together in a large salad bowl. Top with chicken slices and quinoa, and drizzle with the dressing. Toss to combine. Serve with lemon wedges.

5 Fun July 4th Treat Ideas

July 4th is the epitome of Summer! Most people spend that day outside with family and friends, soaking up the sun, and eating really good food! I'm all about the good food part! Holidays are so much better when you have a table full of yummy food! I've been searching around Pinterest for some fun 4th of July treat ideas! These are fun, and super patriotic! I will definitely be making one or two of these on the big day!

1. PATRIOTIC PRETZELS

This is a fun easy recipe I found on Catch My Party Blog!! Its basically 5 simple ingredients, and takes no more than 20 minutes! Kids and adults will love these, and they're so patriotic!! I am super into the sweet and salty treats too!!

Another super simple treat idea! Popping popcorn takes hardly any effort, then you just have to melt some colored chocolate, drizzle it over the popcorn and wallah!!! Yummy, and super cute!

Easy German Pancake Recipe

Happy Sunday & November 1st! Sooo last night my little baby kept me up with Tae Kwon Do moves in my belly, and for some odd reason I had ideas going through my mind a million miles an hour! One of them being making German Pancakes for breakfast, among other things (like a new color scheme for my room lol). Anyway, I found this awesome quick & easy AND delicious recipe and thought I would share it all with you. ENJOY! 

Ingredients

  • 6 eggs
  • 1 Cup of Milk
  • 1 Cup of Flour
  • ½ tsp. salt
  • 3 Tablespoons Butter

(PS. Its just my husband and I, so I made half the recipe!)

Instructions

  1. Preheat your oven at 400º F.
  2. In a large bowl using a mixer blend the eggs, the flour, the milk and salt together. Make sure you mix all ingredients well until the mixture is foamy and smooth.
  3. Melt the three tablespoon of butter and spread it evenly on a 9" x 13" baking pan. The pan needs to be at least 2 inches tall since the pancakes are going to rise quite a bit. Pour the mixture into the pan slowly.
  4. Bake for 20 minutes on a preheated 400º F hot oven.
  5. Enjoy!

Notes

Do NOT open the oven during the cooking time...This will cause your pancakes to be flat and they won't be so good that way.

Guilt Free No Bake Cookies

It's officially the holiday season which means good food, and even better sweets & desserts! Instead of overindulging in cookie dough or eating an entire bag of licorice you can make these treats instead! It especially goes down easier when the treat is not only a bit healthier than other choices, but tasty too! I found this great recipe on Pinterest for No Bake Oatmeal Cookies and tweaked it a little! It is SO yummy and definitely more guilt free then a big brownie slice! (Even though brownies are sooooo good!!!!!!)

No Bake Oatmeal Cookie Recipe:

  • 2 cups coconut sugar
  • ½ cup coconut oil
  • 1 tbsp cocoa powder
  • ½ cup almond milk
  • ½ cup peanut butter
  • ½ cup dark chocolate chips
  • 1 tsp almond flavoring
  • 3 cups quick or rolled oats (certified gluten free)
  1. Mix the coconut sugar, coconut oil, cocoa, and almond milk in a medium saucepan and bring to a boil for one minute and remove from heat
  2. Add the peanut butter, vanilla and chocolate chips and mix well. Stir in the oats, one cup at a time, stirring well after each cup
  3. Spoon heaping tablespoon sized mounds onto parchment paper and let cool completely
  4. Transfer to the fridge to set

 



Cooked Peaches & Cream

When I think of Fall I think of changing leaves, sweaters, Starbucks, and...PEACHES. My grandpa has an amazing garden and orchard and every Fall we get given A LOT of peaches from him. Here is an idea of just how many peaches we get... (and other fruit but that doesn't matter)

A stop to grandpas, is better than going to farmers market! I love this time of year, and all the delicious fruit and vegetables he gives to us. Most of all though, I love his peaches, and my favorite way to eat them (other than biting right into them) is making PEACHES AND CREAM, I usually just peel & slice the peaches and pour heavy whipping cream over them, but this time I tried something a little different. I cooked the peaches!

Here is AMAZINGLY delicious recipe.

 STOVE TOP PEACHES & CREAM

Ingredients:

6 peaches

1/2 cup brown sugar

6 tbsp butter (NOT MARGARINE)

1 cup heavy whipping cream

1/2cup sugar

2 tsp vanilla extract


Cut the peaches into slices. (I usually skin them first, and you can easily do that with a ripe peach if you run it over warm water) Then in a medium skillet melt the butter on medium heat and once it is completely melted add in the brown sugar and continue to stir until the sugar is completely dissolved into the butter. Add peaches and stir. Cook peaches for 2-3 minutes. 

***Whipped Cream: In a mixing bowl mix together the whipping cream and sugar with an electric mixer or whisk. Slowly add in the vanilla. Mix until the ingredients turn into a more whipped cream like texture!

Serve the whipping cream over the cooked peaches and enjoy!

Breakfast Trend; Acai Bowl

Breakfast is by far my favorite meal to eat and cook! Although, I enjoy donuts and french pastries every now and then, those quick breakfasts are good on taste buds but terrible to our bodies. So, I love experimenting with HEALTHY breakfast recipes! For a long time I was cooking healthy pancake and waffle recipes, but those are for mornings where I have more time to cook! So instead I have been turning to ACAI BOWLS recently for a quicker healthier (but YUMMY) breakfast meal! Acai bowls are a huge breakie trend right now, if you havent seen so via instagram! INGREDIENTS:

1/4 CUP CHIA SEEDS

Detox Water Favorites

Staying healthy and active is very important to me! As we all know drinking water is mandatory in staying healthy and is a key factor in losing weight! For some people drinking water isn't the easiest. So here are some Water Detox recipes to either help you drink more water, to use as a meal replacement, or to do a 1-2 day detox. I found these recipes on Top Inspired!

MINT & LEMON H2O

Cut mint leaves, and slice lemons and fill a pitcher with water and ice. Refrigerate  for 1-2 hours, and you've got a great tasting fat burning drink! (Your breath will smell good too)

WATERMELON H2O

You can either slice the watermelon into your ice water, or you can cut triangular slices to eat while you drink. The water from watermelons are one of the best detoxes! You can add mint leaves in this drink as well! 

STRAWBERRY H2O

All you have to do is slice up some strawberries, put them in water, and then add some ice! Super delicious and low in calories!!!

LIME H2O

Cut up some limes in small slices, and put them in ice water. Leave the water in the fridge for 1-2 hours. Then you have a yummy beverage that's perfect for this end of Summer weather! Fights stomach fat as well!
